What is the Innovation Summit?
The third Innovation Summit is a three-day culinary conference that showcases new global ingredients and flavor trends. Hosted by Roland Foods, LLC (Roland Foods) and AUI Fine Foods, Inc. (AUI Fine Foods), the Summit brings together a diverse mix of foodservice, culinary, and beverage professionals to explore the latest innovation in sweet and savory food.
The 2026 Innovation Summit offers a unique opportunity for attendees to participate in hands-on workshops, product cuttings, demos, and networking events.
How do I RSVP?
This is an invite-only event. The RSVP portal will open in early Winter.
When does the Innovation Summit officially begin and end?
The summit will begin on the evening of Tuesday, April 28th, at 5:00 p.m. with a welcome cocktail reception and continue through lunch, concluding on Thursday, April 30th, 2026. We recommend arriving in the early afternoon on Tuesday, April 28th to ensure sufficient travel time.

What is the dress code for the Innovation Summit?
Tuesday evening's welcome reception will be outdoors and we recommend business casual attire. The dress code for Wednesday and Thursday's workshops is smart casual—jeans are welcome. We will be hosting hands-on cooking sessions along with interactive workshops, so comfortable footwear is recommended.
What is the nearest airport to the CIA, Copia?
- San Francisco International (SFO) – about 1.5-hour drive to Napa Valley
- Oakland International Airport (OAK) – about a 1-hour drive to Napa Valley
- Sacramento International Airport (SMF) – about a 1 hour 10-minute drive to Napa Valley
How do I get to and from the Innovation Summit?
You will be responsible for arranging transportation to and from the airport to the Innovation Summit. The event hotel (River Terrace Inn) is within walking distance from the Culinary Institute's Copia location.
Where should I stay during the summit?
Complimentary 2-night stay (4/28 - 4/30), courtesy of Roland Foods & AUI Fine Foods at the River Terrace Inn.
Roland Foods and AUI Fine Foods will arrange all reservations.
